This interesting combination of ingredients makes a wonderful soup that all will enjoy. Serve with a dollop of sour cream on top and some bread for dipping.
2-medium onions, chopped
2-large red bell peppers, chopped
5-cloves of garlic, chopped
1-28oz can crushed tomatoes with liquid
8-cups vegetable broth
1/4 tsp pepper
1/4 tsp chilli powder (optional)
2/3 cup crunchy peanut butter (smooth can be substituted)
1/2 cup uncooked brown rice
Heat butter in a large stock pot over medium heat.
Cook onions and bell peppers until tender and lightly browned, stir in garlic when almost done.
Add tomatoes, vegetable stock pepper and chili powder.
Reduce heat to low and simmer, uncovered for 30 minutes.
Stir in rice and cook for another 15 minutes or until rice is cooked.
Stir in peanut butter until well blended.
Serve with a dollop of sour cream on top and bread. I like to served with Chapati bread.
