A delicious creamy soup that is quick and easy to make.
4-potatoes, peeled and chopped into small 1/2-inch pieces.
2-1/2 cups filtered water
1-small onion chopped
3-cloves garlic, chopped
1-cup thinly sliced fresh or chopped frozen spinach
1-cup heavy cream
1/4-teaspoon ground nutmeg
pepper if desired
In a saucepan, saute onions and garlic until transparent. Add water and bouillon; bring to a boil. Add potatoes and cook until tender and breaking up. Stir in the remaining ingredients. Cook until spinach is wilted and mixture is heated through.
